Cheesy Bacon Wrapped Chicken

Umm, who doesn’t love BACON and CHEESE and CHICKEN?!

You know that recipe that you can always depend on to turn out perfect every single time? That would be this one. I love a good main dish that you can throw in the oven and leave it to do its thing while you focus on the sides. You can’t truly forget about it though because of the aroma that will fill your kitchen!

It’s simple and here’s how you do it!

Ingredients:

  • Chicken Tenderloins (8-12)
  • Applewood Smoked Bacon (8-12 slices)
  • Olive Oil
  • Garlic Powder
  • Chili Powder
  • Ken’s Honey Mustard Dressing (I suppose you could use a BBQ sauce instead)
  • Shredded Sharp Cheddar Cheese

Pound the chicken strips to be even and thinner. Lightly brush the chicken with olive oil and then sprinkle with garlic powder and chili powder. Turn the chicken over and do the same thing to the other side.

Then wrap each chicken strip in bacon. Start at the top and wrap around until you get to the bottom. Lay them on a Silpat lined baking sheet and then sprinkle them again with garlic powder. Bake for 20 minutes on 350 degrees, and then turn them over on the other side to bake for another 20-25 minutes.

Once the chicken in cooked through, squirt each tenderloin with a line of honey mustard and then top with shredded cheese. Then bake for a few more minutes so that it melts all over the chicken.
