Chicken Fettuccine Alfredo

This recipe is definitely one of my easy, go to recipes when I want to make something quick and filling. We absolutely love pasta in our house, so I always have these ingredients on hand. I have tried many different alfredo recipes and have ended up adapting my own. This recipe makes a large amount for about 4 people and has a whole lot of chicken in it. You could easily split the recipe in half for just two people, but J and I love left overs. So the full recipe it is!

Ingredients:

3 cups of heavy cream

2 tablespoons of butter

3/4 cup of Parmesan

1/4 teaspoon garlic salt (or regular salt… J is obsessed with garlic, so I always use garlic salt instead)

1/4 teaspoon of pepper

A few dashes of Cajun Seasoning (optional)

Grilled or Shredded Chicken (I bought about 4-5 pounds of boneless/skinless chicken breasts, threw them in the crockpot, covered them completely with a box of chicken broth. I added garlic salt, pepper and onion powder and cooked on low for 4-6 hours. I removed the cooked chicken and then shredded it in my Kitchen Aid mixer. I froze some of the meat to use for other recipes later and reserved some for the alfredo. Easy shmeezy!)

Combine and stir heavy cream, butter and seasonings over medium heat.

Bring the mixture to a bubble and stir occasionally for 5 minutes.

Take the mixture off of the heat, add the parmesan and whisk in well. Then put the sauce back on the heat and whisk occasionally for another 5 minutes to thicken. Remove the sauce from the heat and add the drained pasta. I like to add the pasta to the sauce little by little making sure that there is enough sauce for all of the noodles. The worse thing would be to have too many noodles and not enough sauce.

Throw in the chicken of your choice and incorporate all ingredients together well. As you can see, we love a good helping of chicken. It’s almost like chicken spaghetti, except better.
